If someone asks to be referred to by an occupation, would you capitalize the occupation since it the functioning in place of the name of the person? Would this be correct? “Well, Witch Hunter we are glad that you are here.”

But wouldn’t it be operating as a proper noun so wouldn’t it make sense for both to be capitalized.

if you ran across such a person, you'd be in the presence of an Asshole.

don’t capitalize it.

I wouldn’t, but I am intentionally anti-caps. We’re not writing in German, after all.

I wouldn’t capitalise the occupation such as ‘cleaner’ but if it was a title such as Sanitation Assistant then I would.

That’s a head scratcher. If it’s a professional title (doctor, professor) and is normally used in conjunction with their name (Dr. Smith, Prof. Jones, officer Franklin) then i would.
Titles that aren’t like that (mechanic, bank teller, cashier) i wouldn’t bother.
What’s the occupation they want to be referred by?

For a second I thought you wrote “Sanitation Assassin” and thought, “well if that’s their occupation then you better call them what they damn well tell you to call them.”

Good morning, Sergeant.
Good morning, Doctor Smith.
Good morning, Witch Hunter.
Good morning, janitor.
Good morning, bankers.
Good morning, little Princess.
Good morning, you dirty son-of-a-bitch.
If it’s operating in the place of a proper name in the singular, it should be capitalized. If it’s an adjective, not capitalized. The only case where it’s gray is #4 - is this acting as a proper name or not? I think it makes more sense in lowercase, but I’m not an English major. Nor am I an English Major.
